Deep in the back room of Laura’s on Brookdale, you’ll find a bar stocked with premium olive oils and vinegars sourced from around the world. The owner of the fine food and gift boutique, Kim Sabourin, curates the selections and shares some of her faves. 

1. Red Cayenne Chili This award-winning oil will hit your palate hard but won’t overstay its welcome. The subtle heat is tailor-made for spice lovers. Try on: Meat lovers’ pizza.

2. White Cascadian Wild Raspberry Vinegar So smooth, so light, but yet so rich—this nectar barely registers as a vinegar. Feeling adventurous? Sprinkle a few drops in your next spritzer. Try on: Summer salad with berries and walnuts. 

3. Tuscan Herb A beautiful earthy aroma will transport you to the Italian countryside. The bouquet of this liquid gold will complement the fresh herbs in your next dish. Try on: Tossed arugula salad with lemon and parmesan. 

4. Pure Maple Balsamic Can’t get enough of our national treasure? This vinegar is for you. Aged perfectly with a smooth finish, it marries the sweetness of maple perfectly with a tiny hint of acidity from the vinegar. Try on: Baked salmon, as a glaze. 

5. “Melgarejo” Hojiblanca EVOO Bold and robust is the best way to describe this product. Fragrant and packed with complex flavours, this oil is perfect to cook with or to douse on your favourite foods. Try on: Fresh mozzarella di bufala.
